The 2012 Macbook Pro uses a standard 2.5 inch SATA hard drive, which is what most laptop computers are using. Where I work we use Samsung SSD's and never had a problem, but you're free to use any 2.5 inch SATA SSD of your choice.

The third-generation MacBook Pro was released in 2012: the 15-inch in June 2012, a 13-inch model in October. It is thinner than its predecessor, made solid-state storage (SSD) standard, added HDMI, and included a high-resolution Retina display.

I think that SSDs have been standard since the 3rd generation MacBook Pro was released in 2012 but you can verify yours is by going to Apple menu > About This Mac > System Report > Storage (in the Hardware section) > Physical Drive > Medium Type.
Use Format: Mac OS Extended (Journaled) for hard drives, and Format: APFS for SSD. Always use GUID Partition Map for macOS. It is best to first choose View ==> Show All Devices so that both drives and volumes appear in the list at left (if not showing, choose View => Show Sidebar).

The Macbook Air is cheaper, smaller, lighter and more portable but has no DVD drive and much less storage capacity compared to the MacBook Pro. The MacBook Pro is more expensive but has a more powerful processor and more ports.
The Mid 2012 MacBook Pro can support up to 16GB of RAM by using 2 8GB kits. Both the Retina and non-Retina models (mid 2012) support 16GB of RAM.
