All replies. The built-in Workout app on Apple Watch does not include (and never has included) weight training as a main activity type, but workouts can still be named as Strength Training. Record your workout by selecting Other as the activity type.
You go into Settings -> Siri & Search -> More Shortcuts -> Log Weight (find via search if necessary). I use the voice command "Log weight" to trigger it. Works as expected.
