Here's how to set the AirPods' double-tap gesture on iOS:
Open Settings on your connected iPhone and tap Bluetooth. Select your AirPods by tapping the i icon. Under Double-Tap on AirPod, select your right or left AirPod to change its double-tap default settings. Select Next Track to make skipping a song the default double-tap action for that AirPod.

How to press AirPods to pause music. When you have configured either your Right or Left AirPod to act as a Play/Pause button, all you have to do is tap on it. It's a toggle so if music is playing, one tap will pause it. If music isn't playing, that tap will start it.
To set your AirPods' double-tap functionality, open your AirPods case or place one in your ear and go to Settings > Bluetooth > Your AirPods and tap the “i” next to your AirPods name. Locate the section DOUBLE-TAP ON AIRPODS and choose the options you want.
